Aperol is the perfect aperitif. Bright orange in colour it has a unique bitter-sweet taste deriving from a secret recipe that has remained unchanged since its creation. An infusion of precious primary components, many herbs and roots in a perfectly balanced combination.

In 2015 Four Pillars combined their Rare Dry Gin with some of the best Shiraz grapes in Australia to create the Bloody Shiraz Gin for the first time. And now each year they steep Yarra Valley Shiraz grapes in gin, and after eight weeks they press the fruit before blending with more Rare Dry Gin.

The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. Four Pillars have used olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. This gin is savoury, textural and bright. Perfect for any Martini - Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired Gin & tonic, with rosemary and lemon!
